Cornmeal & Parmesan Crusted Chicken Bites

Cornmeal and Parmesan Crusted Chicken Bites

2 pounds skinless chicken
1 cup yellow cornmeal
2 tablespoons grated parmesan
1/2 tsp spicy paprika
1/4 tsp chili flakes
1/8 tsp black pepper
1/2 tsp garlic powder
1/4 tsp dried oregano
salt to taste
1 egg

Ingredients for Sauce
1 cup fat free Greek yogurt
3 tablespoons garlic mayo
1 teaspoon lemon juice
4 oz crumbled blue cheese
salt and pepper to taste

Cut each chicken breast into fingers. The number of fingers you get depends on the shape of your fillets. Salt the fingers. Whisk the egg. Whisk all of the ingredients of the coating except for the egg. Dip each finger in the egg and then in the cornmeal mixture until it's completely coated. Place in a baking tray. Bake at 400ºC for 15-18 minutes. Serve with (chilled) sauce.
