CRANBERRY APPLE COBBLER
Crumb Topping Ingredients
- 1 cup rice flour
- ¾ cup almond flour
- ½ cup real maple syrup
- ½ cup shredded coconut
- 3 ounces coconut oil
Cobbler Ingredients
- 5 apples, cored, peeled and cubed
- 2 cups fresh cranberries
- 1 cup real maple syrup
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon orange zest
- ¼ teaspoon clove
- ¼ teaspoon nutmeg
- 2 tablespoons corn starch
- (make into a slurry)
Directions
Place all cobbler ingredients except the slurry into a large pot over medium heat. Bring to a boil, add in the slurry, and bring back to a boil. Then place into your pan and set aside. Place all topping ingredients into a food processor, and mix together. Sprinkle crumb topping onto the cobbler, and bake at 350° F just until the cobbler is golden and the filling is bubbling through.
