CRANBERRY ORANGE RELISH
- One 12-ounce package fresh cranberries
- 2 oranges, peeled
- 1 cup sugar
- 1/2 cup pecans, finely chopped
Using a grinder attachment on your high-power mixer, grind the cranberries, oranges and pecans in intervals. Transfer the chopped fruit and pecans to a 1-quart bowl and add 1/2 cup of the sugar, stirring to mix. Add more sugar to taste, as the sweetness of the oranges will vary.
Expert Tidbit: With the fresh cranberries growing in the cranberry bog at The Lodge at Woodloch, this Thanksgiving Day side dish has always been a favorite since it is inspired by what is growing around us. Although our small bog doesn’t produce enough cranberries for use in the restaurant, it is just enough to know the fall season has arrived and inspires the menu for the season!
