Granola Bars


  • 2 ½ cups rolled oats
  • ½ cup slivered almonds
  • 1/3 cup local honey
  • ¼ cup unsalted butter
  • ¼ cup light brown sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup dried fruit
  • ¼ cup mini chocolate chips


Toast oats and almonds at 350° F until golden brown. Combine butter, honey, brown sugar,
vanilla extract and salt in a saucepan over medium heat, stirring occasionally until butter melts
and the sugar completely dissolves. Put toasted oats and almonds in bowl, and pour mixture
from pot on top. Stir until combined. Add in dried fruit and chocolate chips until combined.
Line pan with foil, and let hang over the edge. Spray with non-stick spray. Put mixture in pan,
and press down really hard until it forms tight with the pan. Put in fridge for 2 hours
or until hard. Cut to desired size.
